Why Hayuka
The lotus opens once, fully, and asks to be noticed while it lasts.
Chef Hana Lim grew up in Petaling Jaya, cooking beside her grandmother in a kitchen that ran on instinct rather than recipe. At nineteen, she left for Kyoto to apprentice under a third-generation kaiseki master.
Eleven years taught her that restraint is not minimalism for its own sake. It is attention: knowing what an ingredient needs, when a course should end, and how one taste prepares the guest for the next.
She returned to Kuala Lumpur in 2023 with a simple proposal. Keep the technique Japanese; let the pantry come home. Petai instead of edamame. Bunga kantan where Kyoto might reach for kinome. Gula melaka in place of kuromitsu.

Knife work, heat and seasoning are applied to clarify an ingredient. Nothing is added merely to make the plate look complete.
Bunga kantan, petai, calamansi, local fish and gula melaka enter the kaiseki grammar without losing where they came from.
The chef

Hana leads every service from the centre of the counter. Her cooking is precise but not precious—rooted in the belief that familiarity and surprise can occupy the same bowl.
A path to Hayuka
Hana begins her apprenticeship in a third-generation kaiseki kitchen.
